1 ripe pear, cut into small pieces

1/4 cup walnuts, toasted

2 dates, pitted & chopped

2 tablespoons pomegranate seeds

1 tablespoon Dijon mustard

2 tablespoons balsamic vinegar

2 cups lettuce of your choice

Sea salt & black pepper to taste



1. Whisk the vinegar, mustard, salt & pepper in a small bowl.

2. Toss lettuce, pears, walnuts and dates in a large serving bowl.

3. Toss in the dressing or serve on the side.
