  1. 6 cups baby arugula, spinach, kale, and chard
  2. 1 fennel bulb, thinly sliced on mandoline
  3. 1 bunch asparagus, stems trimmed
  4. Juice of 3 lemons
  5. Zest of 1 lemon
  6. 3 Tablespoons extra virgin live oil
  7. 1 shallot, minced
  8. 3 garlic cloves, minced
  9. 1 cup pecans, toasted
  10. 1 Fuji apple, thinly sliced
  11. Sea salt and freshly ground pepper
  1. Combine lemon juice, lemon zest, olive oil, shallots, garlic, salt and pepper in a small bowl.
  2. Add the sliced fennel and let marinate at least one hour.
  3. Toss the asparagus with olive oil, salt, and pepper, and grill or sauté for 5-10 minutes, depending on thickness. Once cooled, cut into bite size pieces.
  4. Toss asparagus and marinated fennel with greens just before serving.
  5. Top with pecans and apple slices.
