This high-protein soup is packed with fiber, antioxidants, and intense flavors.  Served with a salad, it easily makes a satisfying, balanced meal.

Ingredients
  1. 1 ½ lbs ground lamb
  2. 1 ½ lbs ground turkey
  3. ½ large white onion, diced
  4. 6 cloves garlic, minced
  5. 8 cups chicken broth
  6. 2 cans garbanzo beans
  7. 1 can cannelini beans
  8. 2 bunches lacinato kale, stems removed and roughly chopped
  9. 2-3 Tablespoons ground cumin
  10. 1 Tablespoon ground coriander
  11. 1 Tablespoon turmeric
  12. 1 Tablespoon ground cardamom
  13. 1 Tablespoon cayenne pepper
  14. Kosher salt
  15. White pepper
Instructions
  1. In a large heavy bottom soup pot, sauté onions and garlic in olive oil over medium heat until translucent.
  2. Add lamb and turkey, season with salt and pepper, and brown for 8-10 minutes.
  3. Add 4 cups of chicken broth, beans, cumin, coriander, turmeric, cardamom, and cayenne.
  4. Cover and cook on medium heat for about 30 minutes.
  5. Add 4 cups of chicken broth and kale
  6. Cover and cook on medium-low heat for and additional 30 minutes.
