Chocolate Coconut Truffles

  1. Extra virgin coconut oil
  2. Unsweetened cocoa powder
  3. Sweet Leaf liquid stevia (chocolate and coconut)
  4. Unsweetened coconut flakes
  1. Let the coconut oil soften in the sun or by a warm oven.
  2. Whisk together a 2:1 ratio of coconut oil and cocoa powder until smooth.
  3. Add stevia to taste; start with about 3 drops per tablespoon of coconut oil, and increase as needed.
  4. Stir in coconut flakes.
  5. Drop by teaspoonful onto a baking sheet lined with parchment paper.
  6. Sprinkle a few coconut flakes on top of each truffle.
  7. Refrigerate until firm.
  1. Peppermint Patty: omit the coconut flakes, and use chocolate and peppermint stevia.
  2. Almond Joy: add chopped almonds and hazelnut stevia.
  3. Mexican Chocolate: omit the coconut flakes and coconut stevia and add ground cinnamon, chili powder, sea salt, and cinnamon stevia.
