Paleo Burgers fit for any diet.  Fill your burger craving with this healthy option.  Indulge on tender burgers over sweet potatoes, add avocado to complete this yummy dish.

Sweet Potatoes
  1. 2 large sweet potatoes peeled and chopped into small cubes
  2. 1 red or yellow bell pepper diced
  3. 1 shallot diced
  4. 2 Tablespoons coconut oil
  5. Salt and pepper to taste
  1. 1 ½ lbs Grass fed ground beef or Grass fed bison
  2. 2 cloves garlic smashed and minced
  3. ½ Tablespoon salt
  4. ½ Tablespoon black pepper
  5. 1 Tablespoon coconut oil
  6. 1 avocado, sliced, serve on top of burger
  7. 1 tomato, sliced, serve on top of burger
  1. On medium heat, add shallot and bell peppers, sauté till soft in 2 T. coconut oil, about 5 minutes. Add sweet potatoes and begin to brown. It will take about 10-12 minutes for the potatoes to cook through. Cook or grill burgers according to your liking, use 1 T. coconut oil if cooking inside. Place the sweet potatoes on plate first, then burgers, and top with avocado and tomatoes. Enjoy.
